Who doesn’t love waffles am I right? I think my new waffle maker is one of my new favorite tools in the kitchen because it is so easy and fun to use. I have been experimenting with lots of waffle recipes and this is by far my favorite. Not only are they a more nutritious waffle but they are also really delicious and filling for breakfast!

I think one of the best parts of waffles is all the different ways you can decorate and customize them.  Topping them with fruit berries and chocolate chips gives them a brighter sweeter touch which is perfect for breakfast in the morning. I also experimented with adding cocoa powder which was absolutely delicious. I made of the variety of waffles for this post, some richer with more cocoa powder some with less. so far everyone who has tried these has really enjoyed them and I am sure you will too!

Healthy Breakfast Waffels 4

Makes – 5 waffles  
Time – 10 minutes to make batter ( cook time may vary depending on waffle press)


  • 1 cup oat flour
  • 1/2 cup spelt flour
  • 2 tsp baking powder
  • pinch of salt
  • 1 tsp cinnamon
  • 2 tbs protein powder
  • 1 cup unsweetened almond milk
  • 1/4 cup melted coconut oil
  •  2 large eggs
  • 1 tbs maple syrup
  • optional – cocoa powder (maximum 1/3 cup)


  1. Preheat and prepare waffle maker according to the machine’s instructions. (I usually preheat it to the medium setting and then lightly coat it with oil
  2. In a bowl combine the oat flour, spelt flour, baking powder, salt, cinnamon and protein powder – and cocoa powder if wanted.
  3. In a separate bowl whisk together the almond milk eggs syrup and melted coconut oil until very well combined
  4. Pour wet ingredients into the flour mixture and mix until combined with a spatula.
  5. Finally, pour batter into waffle maker – the amount may vary depending on machine – my machine recommends 1/2 cup per waffle.
