3 Tomato Salads For Summer

These three salads can be thrown together in no time, leaving you with more time to enjoy the summer. Salads are a quick healthy option for an outdoor get-together. These salads are especially great for tomato lovers because each salad features one of my favorite ingredients…cherry tomatoes! Simply chop some up and create an absolutely delicious salad. 

Organic cherry tomatoes are great to have on-hand in the summer because they are perfect for salads, sandwiches, pasta and more. I personally find cherry tomatoes more flavourful and much easier to work with than regular tomatoes.

1. Black Bean Tomato Salad

This summer inspired salad can be simply tossed together for a quick outdoor lunch. It is colourfull and packed with nutrients containing: black beans, lettuce, onions, cherry tomatoes, sweet potato, basil, and avocado. It is very filling and if you make a large enough batch, it can be shared between a party of people. This salad is very refreshing and packed with flavour so I used a drizzle of lemon juice and olive oil for a dressing.

2. Easy Chickpea Salad

This is one of the easiest salads I have ever made, containing only 5 ingredients. The simple ingredients are easy to throw together for a perfect summer salad. Because the salad recipe is so easy to make, it is a perfect lunch idea for the summer when you want to be spending time outdoors, as opposed to in your kitchen. 3. Rainbow Tomato Salad

This last rainbow tomato salad is definitely a favorite of mine. I discovered these colorful cherry tomatoes when I saw a similar recipe on Pinterest, and I knew I had to try them. At first, I thought the different colors might have a slightly different taste but there was no noticeable difference. The great thing about having a multitude of colors, is that each color contains different phytonutrients creating a dish that is diverse in nutrients. This salad is perfect for an outdoor get-together and it can be eaten as a salad or on toast for the perfect appetizer that guests will definitely love.
