This colorful salad is packed with nutrients! It is really important to eat a variety of colors in the day to ensure you are obtaining all the necessary nutrients. This salad makes nutrition simple and tasty. Simply chopping up some veggies and throwing them into a bowl with some lemon is all that is required for this simply tasty salad. I think it is important to remember that being healthy doesn’t have to be hard. In the summer it is especially easy to get some fresh fruits and veggies to add to your salads. Take a look at your fridge and think of all the things you could throw into a salad. The possibilities are endless. This recipe is a combo of some fruits and veggies you probably have at home. TIP-This salad uses quinoa as a base wich is one of the only foods that has all the amino acids making it a complete protein. Basically, it is super healthy. What I like to do is boil a bunch of quinoa and then separate it into small plastic bags. I then toss the bags into the freezer and let them freeze. Whenever I want some quinoa I simply take a bag out of the fridge and I have the perfect single portion to use in salads or other recipes

Ingredients: note that if you want to change the portions you can
- 1 cup of cooked quinoa
- 1/2 cup cherry tomatoes
- a handful of baby carrots
- 1 small can of black beans
- 1 large leaf of lettuce
- 1 lime or lemon
- Place quinoa into a bowl.
- Chop up lettuce, cherry tomatoes, and baby carrots. Place the chopped ingredients into the bowl with the quinoa.
- Rinse black beans using a strainer and once the beans are clean place into the salad.
- Drizzle the salad with some lemon or lime juice.
