No Bake, Coconut Snowballs


I have been researching, for a couple days looking for healthy holiday treats that aren’t packed with unhealthy ingredients. These chocolate covered snowballs, are not packed with sugar like most other holiday sweets and they don’t require any baking!!! I really like the texture of the snowballs and they are actually super easy and fun to make for the holiday season. This is a perfect recipe to make as a family, and if you are like me and you love coconut, you will definitely like these snowballs!

These Coconut snowballs were drizzled with chocolate which I really liked however you could definitely make them without the chocolate topping. This treat actually reminded me a lot of coconut macarons but they are slightly healthier and they have a softer texture in the middle.

Makes-10                                  Time- 15 minutes to make, leave overnight to set


  • 1 3/4 cups shredded coconut (unsweetened)
  • extra coconut for coating (about 1 cup
  • 3 teaspoons coconut oil
  • 3 tablespoons maple syrup
  • 2 tablespoons unsweetened coconut milk
  • 1/2 teaspoon vanilla extract
  • 1/8 teaspoon salt
  • 1 cup dark chocolate chips


  1. Place 1 cup shredded coconut and 3 teaspoons of coconut oil into a blender.  Blend the ingredients on high speed until it reaches a thick buttery consistency (you may need to scrape down the sides every now and then.
  2. Add the maple syrup, coconut milk, vanilla extract, and salt and process on high speed until all of the ingredients have combined.
  3. Add 3/4 cup of additional shredded coconut and process on high speed until all of the ingredients have combined and formed a batter.
  4. Shape the coconut mixture into spheres (about 1 inch) and coat with the additional shredded coconut.  Do this by rolling them in the coconut. Refrigerate overnight preferably or for at least couple hours.
  5. After the snow balls have been refrigerated you are ready to add the chocolate drizzle. Melt the chocolate chips until smooth and using a spoon or piping bag drizzle the chocolate onto the snowballs.
  6. Let the snowballs set for a bout 5-10 minutes in the fridge, then serve at room temperature.

**serve at room temperature to ensure the texture will be soft and not hard.
