Chickpea Salad

IMG_1964.jpgSalads are a great dish for an appetizer, snack or even meal. This chickpea salad is not only tasty and healthy but it uses simple ingredients. This is great for a lunch when in a rush and it only takes a few minutes to make.


Time – 5 minutes


  • canned chickpeas
  • cherry tomatoes
  • feta cheese
  • salt and pepper
  • lemon juice
  • basil (optional)


  1. Simply rinse the chickpeas and place them in a bowl
  2. Slice the cherry tomatoes and add them to the bowl
  3. Top the salad with crushed feta cheese and chopped basil
  4. Finally, use the lemon juice to dress the salad and add a sprinkle of salt and pepper.

I make this salad constantly and never get sick of it, it is delicious nutritious and probably a favourite recipe. Not only is is easy to make but it is so easy that even kids can make it.
